Cassis

Crème de cassis was popularized by Canon Kir, the mayor of Dijon, who in the 1950s had the idea of mixing it with Bourgogne Aligoté to create an aperitif that has since been enjoyed at tables throughout France. The standard ratio is 1 part 20% Dijon crème de cassis to 9 parts Bourgogne Aligoté, but Canon Kir preferred to use an equal amount of crème de cassis to mellow the taste of the Aligoté, which was very tart at the time.
